Durante la digesti\u00f3n, las enzimas g\u00e1stricas del animal fermentan el grano desde adentro, descomponiendo las prote\u00ednas que generan amargura y transformando su perfil de sabor. El resultado es un caf\u00e9 bioqu\u00edmicamente distinto al convencional: m\u00e1s suave, de cuerpo pleno y con una complejidad frutal que no se consigue con ning\u00fan otro proceso.<\/p>\n<p>El Pop\u00f3 de Misha viene de la Finca Experimental Candelaria, a 1.950 metros sobre el nivel del mar en Alto Inambari, Sandia, Puno. Bajo la direcci\u00f3n del productor Genaro Cahuana, la finca trabaja con dos variedades ar\u00e1bicas de alta valoraci\u00f3n: Bourbon y Geisha. El Bourbon aporta cuerpo y dulzor; el Geisha, su caracter\u00edstica acidez brillante y notas florales que lo convirtieron en la variedad m\u00e1s cotizada del mundo del caf\u00e9 de especialidad.<\/p>\n<p>Despu\u00e9s de recolectados, los granos pasan por proceso lavado \u2014 los mismos se despulpan, fermentan en agua y secan antes del tostado. El V60 y el AeroPress permiten que la acidez brillante y las notas florales lleguen intactas a la taza.
