A 1.680 metros sobre el nivel del mar, el productor Roberto Vilca trabaja una mezcla de variedades ar\u00e1bicas de alta complejidad: Bourbon rojo, Caturra roja y amarilla, Typica y Geisha \u2014 esta \u00faltima, una de las variedades m\u00e1s valoradas en el mundo del caf\u00e9 de especialidad por su perfil floral y su acidez definida.<\/p>\n<p>El proceso es lavado: los granos se despulpan y fermentan en agua antes del secado, lo que produce una taza limpia donde cada variedad aporta su car\u00e1cter sin enmascararlo.
